Hot Beef Commercial
~ Mathew’s favorite meal
Shredded Beef
I used leftover roast from earlier in the week warm in the crock-pot, 3 hours on low or until warm with about 2 cups beef broth in the bottom.
Homemade Mashed Potatoes Red potatoes washed and quartered (we leave the skin on) throw them in a pot of room temp water and bring to a boil, boil until the potatoes are tender. Drain and return potatoes to the pot. Add milk butter salt and pepper to taste and desired consistency.
Beef Gravy
2 cups water
4 Tablespoons beef base
2 Tablespoons Cornstarch
mix well heat to a boil stirring till it thickens
Slice of bread on your plate, then goes the shredded beef up next is the yummy homemade mashed potatoes, top it all off with a good helping of gravy and serve!
Grandma B’s Meatballs
~ Family Favorite!
1 1/2 pounds Ground Beef
1 egg
5 oz. Evaporated Milk
1 cup Quick Oats
1/2 cup Minced Onion
1 tsp. Salt
1 tsp. Chili Powder
1/4 tsp. Garlic Powder
1/4 tsp. Pepper
Mix together, Roll and place on a un-greased pan. Bake at 350 degrees for 20 minutes.
Sauce~
1 cup Ketchup
3/4 cup Brown Sugar
1/4 cup Chopped Onion
1/4 tsp. Garlic Powder
Mix sauce in Crock-pot and put in meatballs. Mix gently and heat till warm.
Drip Beef Sandwiches
1 whole beef chuck roast or sirloin tip roast, about 4 lb
2 cups beef broth
3-4 Tbs Italian seasoning
1 teaspoon salt (adjust to taste)
1 jar (16 oz) pepperoncini peppers, undrained
Deli rolls
Provolone or cheddar cheese slices
Combine all ingredients (except rolls, butter and cheese slices) in a crock pot. Do not drain pepperoncini-pour entire jar into the crock pot.
Cook at low heat for 8 to 10 hours till be fork tender.
Remove roast from crock pot and place in a large bowl. Discard any large fat pieces. Use two forks to shred the meat. Remove pepperoncini from the crock pot and stir into shredded meat (I like to remove the stems from the peppers at this point, but that is optional). If desired, strain remaining liquid in the crock pot, reserving the strained juices.
Slice rolls almost in half. Open rolls and place on a foil-lined baking sheet. Toast at 400°F for about 5 minutes, or until rolls are slightly crispy but not overly brown. Top with cheese slices and return to oven until cheese melts—watch carefully so that you don’t burn the rolls!
Serve meat and peppers on the toasted rolls with a small bowl of the juices for dipping.
Hamburger Cauliflower Bake
1 lb. Ground Beef
1 head Cauliflower
Salt & Pepper to taste
1 Tablespoon minced Garlic
1/4 cup minced Onion
1 cup shredded Cheddar Cheese
Brown ground beef add your salt, pepper, minced onion and garlic. Steam cauliflower. Transfer steamed cauliflower to beef mixture mix together. Top with cheese and serve.

Chili
1 lb. Ground Beef and Ground Pork
1 Onion - chopped
1 bottle V8 Juice
4 Cans Diced Tomatoes- drained
1 can Pinto, Kidney, Chili and Black Beans
3 Tbsp. Taco Seasoning
1 Tbsp. Minced Garlic
1 Tbsp. Chili Powder
Brown Ground Beef and Pork, throw in the onions and sweat down a little… add rest to the pot and heat till hot.
Serve with Chopped Onion, Saltines, Sour Cream, Cheddar Cheese, Fritos Corn Chips and Corn Bread.
Beef Tips
2 tbsp. Olive Oil
2 lb. Stew Meat
1 Onion Chopped
3 cups Beef Broth
1/2 Envelope Onion Soup Mix
1 Tbsp. Worcestershire Sauce
1/2 tsp. Pepper
2 Tbsp. Corn Starch
1/3 cup Water
1/2 Tbsp. Parsley chopped
Place half the oil in pot and half the beef, cook till fully cooked and removed and set aside. Repeat with rest of oil and beef. Remove beef add onions to the pot cook till tender. Add beef back to the pot along with beef broth, soup mix, Worcestershire sauce and pepper. Stir to mix and cover. Reduce heat to low and simmer 2 hours. Mix cornstarch and water in a separate bowl. Pour into beef mixture and stir until thickened. Sprinkle with parsley and serve hot over homemade mashed potatoes.
you can always sub stew meat with roast as well just cube it up!
Crockpot Lasagna Soup
1lb. Ground Beef- browned
3 cups Beef Broth
3 Tbsp. Minced Garlic
2 tsp. Dried Parsley
2 tsp. Dried Basil
1/2 cup Minced Onion
1- 28 oz. can Diced Tomatoes
1 6oz. Tomato Paste with Italian Seasoning
1 cup Vegetable Juice
2 cups Uncooked Small Shell Pasta
1/4 tsp. Pepper
1 cup Water
Mix together tomatoes, tomato paste. Add broth, browned ground beef, garlic, parsley, basil, onion, juice, salt and pepper. Cook on Low 7-8 hours. 30 min before serving stir in uncooked noodles and water. Stir. Serve with Cheese!
Beefy Noodle Soup
2 lbs. Osso Buco (Soup Bones)
Salt & Pepper
6 cups Beef Broth
1 Onion Chopped
6 large Carrots peeled and sliced
5 Celery Stalks
1 Tbsp. Minced Garlic
4 Potatoes- cubed
1 Tbsp. Worcestershire Sauce
1 Bay Leaf
2.5 cups Noodles
Beef Base to taste if needed for flavor
Cover your cookie sheet with foil, place your soup bones on the cookies sheet season with salt and pepper. Roast at 425 degrees in the oven for 15 min. Transfer to a soup pot and add beef broth, garlic, onion, bay leaf and worcestershire sauce. Simmer on low for 4 hours pull out the beef and shred the meat, discard bone. Add the meat back to the pot. Discard bay leaf. Add carrots, celery and potatoes and simmer for an additional 2 hours. Throw in the noodles 30 min before serving.
this recipe can also be made barley in place of the noodles.
Taco Seasoning
1 cup Dried Minced Onion
1/2 cup Chili Powder
1/4 cup Garlic Powder
1/4 cup Ground Cumin
2 tsp. Oregano
2 Tbsp. Salt
1-3 Tbsp. Red Pepper Flakes (adjust to your liking)
Mix together and store in a pint Jar. Use 2-3 tbsp. of taco seasoning per pound of meat.
